After a month of fermentation we bottle EYE Ree

 
 

So, this is going to be my first entry to my online blog. Actually the website calls it a journal so we'll stick with that. Today we spent time in the shop bottling our new Scotch bonnet and habanero mash hot sauce, Eye-ree. We have been fermenting this sauce in our large one gallon fermentation jars for almost a month now and are really excited to finally get it in bottle. I had a sauce a while ago by my friend Dylan at Baby D's hot sauce and it really peeked my interest see what I could do to create a unique flavor using the scotch bonnet. I sourced these from an organic farm and have really looked forward to using them. They give a really unique flavor and especially when you add the wood pellet smoke and roasting process really helps bring out the savoriness and fruit of the Scotch bonnet pepper and also the habanero MASH which has also been fermenting for around 2 weeks definitely kicks things up a notch with the heat. I only got a chance to bottle 20 bottles of this in the 5 oz format and a couple of small 2 oz glass bottles. I'm really excited to get my limited edition bottles out because these will really showcase what we at prescribed burn can do when given the right ingredients in the right opportunity.
